Already in the Middle Ages, prepared  dishes and sauces are sold.

In the cities, the cook-caterers have the right to roast and to cook the meats and poultries, to make pork sausages flavored with fennel and spices. And, in spite of the prohibition, they market the blood sausage. They therfore feed all those who do not have a  kitchen on their premises.

 

 

To accompany chicken or duck we recommend saffron rice, or a purée of broad beans, lentils or turnips, served with red wine.
